thanksgiving pies and a big ouchy

Yesterday started out great. I was really on a roll getting things done, when BAM I was getting some packing boxes out of the car in the pouring rain and my knee popped out of place. Have you ever seen those big football players go down on the field writhing in pain. Well, that is what it felt like. I literally couldn't straighten my knee and when I tried it felt like a bomb was exploding in there. But I knew I was tougher than those big old guys, so I managed to get the boxes and haul them into the house, drag them up the stairs, and fill them up to give someone a shipping estimate, all without straightening my knee. I then sat down on my bed and kind of burst into tears. Not one of my finer moments, but it really hurt. Trying to decide if I needed to go to the ER, I hobbled around for a bit and wow, my knee popped back into place. So my big thankfulness of the day turned out to be gratitude for the ability to walk.  Yahoo!!!


Now on to the pies !!!!!


We sure do love pies here in the south, and since it is Thanksgiving week and anything goes on Thanksgiving, I thought I would share a couple of southern recipes. (you can diet next week)







This recipe is from Mommy's Kitchen

Southern Pecan Pie


1/2 - cup sugar
1/4 - up butter (softened)
1 - cup corn syrup
(or replace with moonshine or cane syrup)
1/4 - tsp salt
1 1/2 - tsp vanilla
3 - eggs
1 to 1 1/2 - cups pecans
1 - 9- inch deep dish pie shell (unbaked)

Preheat oven to 350 degrees. Cream (mix) the sugar and butter well in a medium sized mixing bowl. Add syrup, salt, and vanilla. Mix again. Add eggs one at a time and mix after each. Stir in pecans. Pour mixture into unbaked pie crust. Bake in preheated oven until top is brown and pie set (about 45 minutes). If the crust begins to brown to quickly cover just the crust with foil and continue baking. Test pie by inserting a toothpick into the center of pie. It should come out almost dry.

*Tip Be sure to mix ingredients well. Otherwise the pie may not set up. You can use chopped pecans or whole. Store in the refrigerator. May be reheated in microwave before serving (about 15 sec)

Kentucky Derby Pie


Ingredients:
  • 1 c. sugar
  • ½ c. flour
  • 2 eggs, slightly beaten
  • 1 tsp. vanilla
  • ½ c. salted butter, melted & cooled
  • 1 c. broken pecans
  • 6 oz. semi-sweet chocolate chips
  • ¼ c. Kentucky Bourbon (optional)
  • 1 Pie Crust
Mix sugar and flour together. Add the eggs and remaining ingredients. Pour into crust. Bake at 350° for about 1 hour.




There was kind of a pecan theme here, but we have a lot of pecan trees in the south. What kind of pie do you like for Thanksgiving? I'm not a huge pumpkin pie fan so I kind of look for something different. Derby pie is definitely one of my favorites, although I am trying to cut back on chocolate, but maybe just this once.

  6. Pecan pie is my favorite! I get fresh pecans from a family friend in Mississippi and keep them int he freezer to use on all kinds of things. I have a recipe for chocolate pecan pie...wonder where it is? My dad is a pie-a-holic so he loves Thanksgiving and usually eats a small piece of 3 or 4 flavors LOL! Pie is our friend.   8. I think I would have had to sit down right then and there and cried. I am so glad it's doing better. Sometimes my knee moves over a bit and scares the heck out of me. I love pecan pie. Hope one of our Thanksgiving guest brings one...yummo. Happy Thanksgiving. xo
